Pomegranate Quinoa Salad

It is pomegranate season and here at Juice Society we are always trying to find ways to incorporate seasonal produce into our juices and our meals. Owner & certified health coach, Danielle Sobel, created a quick and easy recipe to use up those pomegranate arils. This recipe is also great to transition into or out of your cleanse. 

What You'll Need:

1 cup sprouted quinoa

1 cucumber

1 red bell pepper

1/2 red onion or 1 small red onion

2 cups spinach

1/3 cup pomegranate arils

1 avocado

1 lemon

1 tbsp olive oil

Salt & pepper to taste

Optional: light herbed feta cheese

How to:

Add 2 cups of water & 1 cup of quinoa to a pot. Bring to a boil & reduce heat. Let simmer until all water is evaporated.

Chop cucumber, red pepper, red onion and add to bowl.

Add spinach and pomegranate arils.

Once quinoa is finished and cooled add to bowls and mix thoroughly.

Top with a squeeze of lemon, olive oil & salt+pepper to taste

Refrigerate. Once ready to serve add diced avocado on top.

Serves: 2-3
