10-Minute Meal // Simple Hemp + Herb Salad

As you might know by now, we are all about making delicious healthy meals that require a small amount of time and clean up. Not many of us have an hour to prepare our lunch in the middle of the day which can, more often than not, end up in grabbing a less-than-nutritious meal to get us through the day. This simple salad can be made the night before and makes the perfect lunch or even breakfast!  Ingredients: 

1/2 bunch flat leaf italian parsley

1-2 cups of cherry tomatoes

1 cucumber

1/4 cup hemp seeds

1/4 cup sunflower seeds

Extra virgin olive oil

Salt + Pepper to taste

Preparation:

1. Chop parsley, dill, cucumbers & tomatoes

2. Add in hemp & sunflower seeds

3. Add EVOO (we use about 1/4 cup but feel free to use a little less or more) + salt/pepper

4. Additions: Add in avocado for a healthy dose of fats or 2 hard boiled Vital Farms eggs for an extra protein boost!
