Jicama & Heart of Palm Ceviche

We recently hosted an incredible brunch party for Camille Styles for a few of our closest friends and lets just say the food was, well.. incredible. With our best plant-based feet forward we dove into ideas for recipes that would recreate a classic dish in a vegan way. Voila, a vegan ceviche was born. Jicama and Heart of Palm Ceviche - Raw, GF, Vegan
1 1/2 cups jicama - diced
1 cup heart of palm, chopped
1/2 cup cilantro chopped
1 cup cherry tomatoes, halved
1 ear of corn - raw
1 jalapeno seeded and chopped
Juice of two limes
1/4 cup olive oil
sea salt to taste
Let sit in the fridge for 30 minutes to chill and let the flavors come together. Top with avocado and serve on top of greens or almond flour tortillas!
