Watermelon Summer Salad


Summer is officially here and we are super excited to get into the kitchen with all this new, seasonal produce! It was a scorching hot day here in Austin so we decided to use some leftover cut up watermelon to whip up this quick salad. It makes for a perfect side dish at a BBQ or as a full lunch or dinner!

What You'll Need:

1-2 cups of chopped watermelon

1 bunch arugula

1 bunch spinach

1/2 cucumber

1 small bulb of fennel

1/2 bunch mint

1/4 cup olive oil

Optional: 1/2 cup feta and/or 1/2 avocado

How to:

1. Slice cucumber & fennel. Place in bowl with watermelon and greens.

2. Roughly chop mint - add to bowl

3. Add in optional feta cheese. If using avocado, do not add until ready to serve!

4. Drizzle olive oil

5. Refrigerate until chilled. Add a drizzle of balsamic

6. Serve cold & enjoy!
